Coffee Freeze? This idea came to life in 1994. How to keep a maximum quality and aroma of espresso coffee? After twenty years of experience, we came to an idea - "freeze". A revolutionary and daring idea. We have been looking for a grain of high quality and strong aroma. We have noticed that a large number of manufacturers use Arabica type of grain.
According to that, we tried with a new resource, Robusta, but we got an extremely bitter taste. We have been looking for a sweet grain of intensive aroma.
"Santos" granulate grain 18/19 Brasilian region was an excelent choice. Full and strong grain, with sweet aroma.
We have decided to duble roast coffee on 90 degrees. Vantilation cooled, not water. Grain selection is done by human factor. Small granulate and broken grain are being cast off. Milled after 12 hours to TYPE-400. Then we pack it in metal wrapping material of 330 gr with a screw-nut cover. We plan to use a vacum package in near future.
We finish roasting and milling process within 24 hours in order to keep the maximum of aroma quality. Before final use, we store it on -15 degrees. It is stored on -5 degrees 24 hours before being used, and we tend to keep the same temperature during its preparation.
We use 8-9 gr for one dose of espresso coffee. Pump pressure on the caffemat is 8 bars, and since we use the smallest grain size, we use low presure.
A small cup of coffee is prepared in about 20-25 seconds. We get a strong, intensive cream with golden foam. The taste is very strong and a bit sweet, and we can feel its taste even after several hours. Strong and pleasant aroma of "Coffee Freeze" can replace up to 3 cups of other espresso coffees.
Of course, "Coffee Freeze" needs to stay on 5 degrees, and it is out only when it is being dosed. Its high quality is preserved only on this temperature.
"Coffee Freeze" is still being tested, in order to get even better results.
Because of the amount of work and financial difficulties, "Coffee Freeze" is not being distributed, and it is served only in "Bojcoffee". We hope that sometime in future "Coffee Freeze" would become a part of Your everyday life.
